Instructions

  1. Preheat oven to 350°F (175°C). Prepare gluten-free cake mix according to package instructions, pour batter into greased 9×13 inch pan, and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  2. In a medium bowl, combine sliced strawberries, blueberries, raspberries, and 2 tablespoons sugar. Stir gently and let sit for 15-20 minutes to macerate.
  3. Whip cold heavy cream with an electric mixer or whisk until soft peaks form. Chill until assembly.
  4. Beat softened cream cheese with powdered sugar, vanilla extract, and lemon zest until smooth. Gently fold in half of the whipped cream to lighten the mixture.
  5. Prepare instant vanilla pudding mix with 2 cups cold milk or almond milk, whisk until thickened (about 2 minutes). Chill briefly if needed.
  6. Cut cooled cake into 1-inch cubes. In a trifle bowl, layer one-third of cake cubes, then a layer of macerated berries with syrup, followed by cream cheese mixture, then vanilla pudding. Repeat layers two more times, finishing with a final layer of whipped cream on top.
  7. Cover and refrigerate for at least 2 hours or overnight to let flavors meld and layers soften.
  8. Before serving, garnish with fresh mint leaves or edible flowers if desired.
