  • 1 can (15 oz) black beans, rinsed and drained
  • 1 tsp cumin
  • 1/2 tsp chili powder

  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup salsa fresca or your favorite jarred salsa
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onions
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced or mashed
  • Optional: sliced jalapeños or hot sauce
  • 6 large flour tortillas (10-inch, warmed)
  • Optional: corn tortillas for a gluten-free option

Instructions

  1. Rinse and drain the black beans. Dice tomatoes, chop onions, and cilantro. Slice or mash the avocado. Set all toppings out in separate bowls to create your burrito bar.
  2. In a small skillet over medium heat, add the rinsed black beans with cumin, chili powder, and a pinch of salt. Stir occasionally until heated through and fragrant, about 5 minutes. Keep warm.
  3. Crack eggs into a bowl. Add cottage cheese, milk, salt, and pepper. Whisk vigorously until mixture is smooth and slightly frothy.
  4. Heat butter in a non-stick skillet over medium-low heat. Pour in the egg mixture. Stir gently and continuously with a spatula, scraping the bottom of the pan to prevent sticking. Cook until eggs are just set but still moist. Remove from heat.
  5. Wrap tortillas in a damp paper towel and microwave for 30-45 seconds, or warm individually in a dry skillet for 20 seconds per side until soft and pliable.
  6. Lay out warm tortillas and bowls of eggs, beans, cheese, salsa, veggies, avocado, and any extras. Let everyone build their own burrito with their favorite combinations.
  7. Serve immediately with optional hot sauce or jalapeños on the side.

Notes

Use room temperature eggs for fluffiness. Cook eggs low and slow to avoid rubberiness. Rinse canned beans to remove tinny taste. Warm tortillas before assembling to prevent cracking.
