  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste
  • 2 tablespoons tomato paste
  • 1/2 cup (120 ml) beef broth or water
  • 2 tablespoons freshly squeezed orange juice
  • 12 small corn or flour tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, chopped cilantro, grated cheese (cheddar or Monterey Jack), sour cream or Greek yogurt, fresh lime wedges

Instructions

  1. Finely chop the yellow onion and mince the garlic cloves. Squeeze fresh orange juice and set aside. Warm the tortillas gently on a dry skillet or in the oven wrapped in foil (about 5 minutes at 350°F / 175°C).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once shimmering, add the chopped onions and sauté until translucent and soft, about 4-5 minutes.
  3. Add the minced garlic and cook for 30 seconds to 1 minute until fragrant, being careful not to burn it.
  4. Add the ground beef to the skillet. Cook, stirring occasionally, until no longer pink and nicely browned, about 7-8 minutes. Break up the meat evenly for good texture.
  5. Sprinkle in chili powder, smoked paprika, cumin, oregano, salt, and black pepper. Stir well to coat the meat evenly.
  6. Stir in tomato paste, then pour in beef broth or water and the fresh orange juice. Mix well, scraping the pan bottom to loosen browned bits.
  7. Reduce heat to low and simmer gently for 8-10 minutes until the liquid reduces slightly and flavors meld. Add more broth or water if it gets too dry.
  8. Taste and adjust seasoning with salt or extra chili powder if desired.
  9. Spoon the beef mixture into warm tortillas and top with your favorite toppings such as shredded lettuce, diced tomatoes, cilantro, cheese, sour cream, and a squeeze of lime.
  10. Serve immediately while warm and fresh.

Do not rush browning the beef to get a good sear. Use fresh garlic for best flavor. Simmer gently to keep beef juicy. Warm tortillas properly by wrapping in foil and heating in the oven or dry skillet. Multitask by prepping toppings while beef simmers. Tomato paste is essential for richness and texture. For a lighter option, substitute ground turkey or chicken. Frozen corn tortillas can be used if heated gently.
