  • 1 teaspoon lemon zest (optional)
  • 1/4 cup graham cracker crumbs
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Rinse 1 cup of fresh berries and pat dry. Slice strawberries into thin pieces if using. Set aside in a small bowl.
  2. In a microwave-safe bowl, combine 1/2 cup mascarpone, 2 tablespoons powdered sugar, 1/2 teaspoon vanilla extract, and 1 tablespoon milk. Whisk until smooth and creamy. If desired, add 1 teaspoon lemon zest. If mascarpone is too firm, microwave for 10 seconds to soften before mixing.
  3. Place about 1/4 cup graham crackers in a ziplock bag and crush gently with a rolling pin or something heavy until fine crumbs with some small chunks remain.
  4. Spoon half the mascarpone mixture into your serving bowl or cup. Layer with half the berries, then sprinkle half the graham cracker crumbs on top. Repeat layers with remaining mascarpone, berries, and finish with graham cracker crumbs.
  5. Optionally, drizzle 1 teaspoon honey or maple syrup over the top for added shine and sweetness.
  6. Serve immediately for best texture, or refrigerate up to 2 hours before serving.

Notes

If mascarpone is too firm, soften it in the microwave for 10-15 seconds before mixing. Use powdered sugar to avoid graininess. Fresh, ripe berries provide the best flavor. For gluten-free, substitute graham crackers with gluten-free cookies or nuts. Serve immediately for crunch or refrigerate up to 2 hours; crumbs may soften over time.
