A quick and elegant salmon dinner perfect for romantic summer evenings, featuring pan-seared salmon with a fresh lemon-rosemary marinade and a light summer side salad.

Ingredients

Scale
  • 4 salmon fillets (6 ounces / 170 grams each), skin-on
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 teaspoons fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 2 cups baby arugula or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, combine olive oil, lemon zest, lemon juice, chopped rosemary, minced garlic, salt, and pepper. Whisk until well blended.
  2. Pat salmon fillets dry with paper towels. Place skin-side down in a shallow dish and spoon marinade over fillets. Let sit at room temperature for 10–15 minutes (do not marinate longer than 30 minutes).
  3. While salmon marinates, toss baby arugula, cherry tomatoes, and cucumber slices in a bowl. Drizzle with olive oil and balsamic vinegar or lemon juice. Season with salt and pepper. Set aside.
  4. Heat a non-stick or cast iron skillet over medium-high heat until hot but not smoking (about 2–3 minutes).
  5. Place salmon fillets skin-side down in the hot skillet. Press gently with a spatula for 10 seconds to prevent curling. Cook undisturbed for 4–5 minutes until skin is golden and crispy.
  6. Flip fillets and cook for another 2–3 minutes until salmon is opaque but still moist inside.
  7. Remove salmon from pan and let rest on a warm plate for 2 minutes.
  8. Plate salmon over or alongside the summer salad. Garnish with a lemon wedge and rosemary sprig if desired.

Notes

Pat salmon dry before cooking to ensure crispy skin. Use a hot pan and press salmon gently to prevent curling. Flip only once. Marinate no longer than 30 minutes to avoid cooking the fish with acid. For extra flavor, add a drizzle of honey or sprinkle chili flakes. Leftovers reheat best in a low oven at 275°F for 10–15 minutes.
