Ingredients

Scale
  • 2 lbs (900g) boneless, skinless chicken thighs
  • ⅓ cup (110g) honey
  • ⅓ cup (80ml) low-sodium soy sauce
  • ¼ cup (60g) ketchup
  • 4 cloves garlic, minced
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil
  • 2 tablespoons (16g) cornstarch
  • 2 tablespoons (30ml) cold water
  • Salt and pepper to taste
  • Sliced green onions and sesame seeds for garnish (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat if desired. Place thighs in a single layer in the bottom of a 4-quart or larger crockpot.
  2. In a small bowl, whisk together honey, soy sauce, ketchup, minced garlic, rice vinegar, and sesame oil until smooth.
  3. Pour the sauce evenly over the chicken thighs, ensuring each piece is coated. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2.5 to 3 hours, until chicken is tender and reaches an internal temperature of 165°F (74°C).
  4. Using tongs, carefully transfer the cooked chicken to a plate or cutting board. Leave the sauce in the crockpot.
  5. In a small bowl, mix cornstarch with cold water until smooth. Pour the slurry into the sauce in the crockpot and stir well. Turn the crockpot to HIGH and cook uncovered for 10 to 15 minutes, stirring occasionally, until the sauce thickens into a glossy glaze.
  6. Shred the chicken with two forks or leave pieces whole. Return the chicken to the crockpot and stir to coat with the sauce.
  7. Garnish with sliced green onions and sesame seeds if desired. Serve immediately over steamed rice, with roasted vegetables, or in lettuce wraps.

Notes

For best results, cook on LOW for tender chicken. Do not use frozen chicken thighs; thaw first. Avoid lifting the lid frequently during cooking. The sauce can be doubled if desired. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
