  • 1/3 cup (113g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 2 tablespoons (30g) ketchup
  • 6 cloves garlic, minced
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) toasted sesame oil
  • 1/2 teaspoon (1g) ground ginger
  • 2 tablespoons (16g) cornstarch
  • 2 tablespoons (30ml) cold water
  • Sliced green onions (optional garnish)
  • Sesame seeds (optional garnish)
  • Extra honey for drizzling (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat if desired. Place chicken in the bottom of the slow cooker in a single layer.
  2. In a medium mixing bowl, whisk together honey, low-sodium soy sauce, ketchup, minced garlic, rice vinegar, sesame oil, and ground ginger. Taste and adjust sweetness or saltiness as needed.
  3. Pour the sauce evenly over the chicken thighs. Use a spoon or your hands to coat each piece.
  4. Cover the slow cooker with the lid. Cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is fork-tender but holds its shape.
  5. Using tongs, transfer the cooked chicken to a plate and tent loosely with foil to keep warm.
  6. Turn the slow cooker to HIGH. In a small bowl, whisk together cornstarch and cold water until smooth. Pour the slurry into the hot liquid in the slow cooker, whisking constantly. Cook uncovered for 10-15 minutes, stirring occasionally, until the sauce thickens to a glossy, syrupy consistency.
  7. Return the chicken thighs to the slow cooker. Spoon the thickened sauce over each piece, turning to coat completely. Let sit in the sauce for 5 minutes.
  8. Transfer the glazed chicken to a serving platter. Drizzle any remaining sauce over the top. Garnish with sliced green onions and sesame seeds. Serve immediately.

Notes

For best results, use chicken thighs instead of breasts to keep the meat juicy. Do not lift the lid during cooking. If the sauce is not thickening after 15 minutes, mix another teaspoon of cornstarch with a tablespoon of cold water and add it in.
