This Easy Crockpot Ground Beef and Potato Casserole is a set-it-and-forget-it miracle that delivers tender potatoes, perfectly seasoned beef, and a creamy, gravy-like sauce with almost zero effort. It’s the perfect hearty, comforting dinner for busy weeknights.

  • 1 lb lean ground beef (85/15 preferred)
  • 4 medium russet potatoes, peeled and thinly sliced (about 1/8-inch thick)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk (whole milk preferred)
  • 1 cup shredded cheddar cheese, divided
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 2 tbsp chopped fresh parsley, for garnish (optional)

Instructions

  1. Prep your ingredients: Peel and thinly slice your potatoes (about 1/8-inch thick). Dice the onion and mince the garlic. Shred the cheese if using a block.
  2. Mix the sauce: In a small bowl, whisk together the cream of mushroom soup, milk, salt, pepper, thyme, and paprika until smooth. Set aside.
  3. Layer the bottom: Spray your slow cooker with non-stick spray. Add a thin layer of potatoes (about 1/3 of them), then half the diced onion, half the minced garlic, and half the ground beef (broken into small crumbles). Sprinkle with a little salt and pepper.
  4. Add the sauce: Pour half the soup mixture over the first layer. Sprinkle with 1/3 cup of shredded cheese.
  5. Repeat the layers: Add another third of the potatoes, the remaining onion and garlic, and the rest of the ground beef. Pour the remaining soup mixture on top, and add another 1/3 cup of cheese.
  6. Top with remaining potatoes: Arrange the last of the potatoes on top in an even layer. Sprinkle with the last 1/3 cup of cheese.
  7. Cook low and slow: Cover and cook on LOW for 4-5 hours, or on HIGH for 2.5-3 hours. The casserole is done when the potatoes are fork-tender and the beef is cooked through. Don’t peek too often.
  8. Rest and serve: Turn off the slow cooker and let it rest for 10 minutes. Garnish with fresh parsley and serve hot.

Notes

Slice potatoes evenly (about 1/8-inch thick) for best texture. Let casserole rest for 10 minutes after cooking to set. If top looks pale, broil for 2-3 minutes after transferring to an oven-safe dish. If casserole looks dry after 3 hours, add a splash of beef broth or milk. Use a 5 or 6-quart slow cooker for best results; a 7-quart may cause uneven cooking. Spray slow cooker insert with non-stick spray to prevent sticking.
