These easy crockpot buffalo chicken sliders are the perfect party appetizer or weeknight dinner. With just 10 minutes of prep and simple ingredients, you get tender, flavorful shredded buffalo chicken on soft slider buns with melted cheese.

  • 2 pounds boneless, skinless chicken breasts (about 34 breasts)
  • 1 cup (8 ounces) buffalo hot sauce (recommended: Frank’s RedHot Original)
  • 1/2 cup (1 stick) unsalted butter, cut into cubes
  • 1 packet (about 1 ounce) ranch seasoning mix (recommended: Hidden Valley)
  • 1216 soft slider buns (Hawaiian rolls recommended)
  • 8 slices provolone cheese (or about 2 cups shredded mozzarella)
  • 1/2 cup blue cheese dressing (optional but recommended)
  • Optional garnishes: sliced green onions, crumbled blue cheese, or chopped celery leaves

Instructions

  1. Pat the chicken breasts dry with paper towels. Place them in the bottom of your crockpot in a single layer.
  2. In a small bowl, whisk together the buffalo hot sauce, melted butter, and ranch seasoning mix. Pour the mixture over the chicken, making sure each piece gets coated.
  3. Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken shreds easily with a fork.
  4. Carefully remove the chicken from the crockpot and place it on a cutting board. Use two forks to shred it into bite-sized pieces. Return the shredded chicken to the crockpot and stir it into the sauce.
  5. Preheat your oven to 350°F. Split the slider buns in half and place them on a baking sheet, cut side up. Toast for 3-5 minutes until lightly golden.
  6. Spoon a generous amount of the buffalo chicken mixture onto the bottom half of each bun. Top with a slice of provolone cheese (or a sprinkle of shredded mozzarella). Place the top bun on each slider.
  7. Return the assembled sliders to the oven for 3-5 minutes, just until the cheese is melted and bubbly.
  8. Drizzle with blue cheese dressing and sprinkle with sliced green onions or crumbled blue cheese if desired. Serve immediately.

Notes

For best results, toast the buns to prevent sogginess. Use a slotted spoon to serve the chicken to avoid excess sauce. The chicken can be made ahead and stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat in a skillet with a splash of water or hot sauce.
