  • 4 cups shredded green cabbage (fresh and crisp; napa cabbage optional)
  • 1 cup shredded carrots (optional for lower carb)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce (low-sodium tamari for gluten-free)
  • 1 tablespoon sesame oil (toasted preferred)
  • 1 teaspoon rice vinegar (can substitute apple cider vinegar)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon avocado or olive oil (for cooking)

Instructions

  1. Prep the veggies: shred cabbage (about 4 cups packed), shred carrots, and mince garlic and ginger (10 minutes).
  2. Heat 1 tablespoon avocado oil over medium-high heat in a large skillet. Add ground pork, break it up, and cook until browned and cooked through, about 6-8 minutes. Season lightly with salt and pepper. Drain excess fat if necessary, leaving some for flavor.
  3. Lower heat to medium. Push pork to one side of the skillet. Add garlic and ginger to the empty side and sauté for 1-2 minutes until fragrant, being careful not to burn.
  4. Add shredded cabbage and carrots to the skillet. Toss and cook, stirring occasionally, allowing cabbage to soften but remain crunchy. Let it cook without stirring for a few minutes per side to develop crispy edges (about 3-4 minutes per side).
  5. Pour in soy sauce, sesame oil, rice vinegar, and red pepper flakes if using. Stir well to combine. Taste and adjust seasoning with salt and pepper.
  6. Turn off heat and sprinkle sliced green onions over the top before serving.

Notes

For extra crispiness, increase heat at the end and let the bottom layer brown without stirring. Avoid overcooking cabbage to prevent mushiness. Fresh ginger is essential for authentic flavor. Use avocado oil for cooking and add toasted sesame oil at the end for aroma. Drain excess pork fat but leave some for flavor. Cooking in batches prevents steaming and helps crispiness.
