  • 1 large head of cauliflower, cut into bite-sized florets (about 4 cups or 500g)
  • 1 cup (120g) all-purpose flour
  • 1 cup (240ml) milk (dairy or plant-based works fine)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (120ml) buffalo wing sauce (recommend Frank’s RedHot)
  • 2 tablespoons melted butter or vegan butter
  • 1/2 cup (120g) plain Greek yogurt or sour cream
  • 1/4 cup (60ml) buttermilk (or regular milk with 1 teaspoon lemon juice)
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Rinse the cauliflower head and pat it dry. Cut into bite-sized florets, about 1 to 1.5 inches (2.5-4 cm) wide.
  3. In a large mixing bowl, whisk together the all-purpose flour, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
  4. Add the cauliflower florets to the bowl with the batter. Gently toss until every floret is evenly coated.
  5. Place the coated florets on the prepared baking sheet in a single layer, leaving space between each piece.
  6. Bake for 20 minutes, then remove from the oven and flip each floret. Return to the oven and bake for another 10 minutes.
  7. While the cauliflower is baking, mix the buffalo wing sauce and melted butter in a small bowl. Whisk until combined.
  8. Remove the cauliflower from the oven and transfer to a large bowl. Pour the buffalo sauce over the hot cauliflower and toss gently until every piece is coated.
  9. Return the sauced cauliflower to the baking sheet in a single layer. Bake for another 10-15 minutes, until the sauce has caramelized and the edges are dark and crispy.
  10. While the cauliflower finishes baking, whisk together all the ranch ingredients in a small bowl. Taste and adjust seasoning.
  11. Remove the cauliflower from the oven and let it cool for 2-3 minutes on the baking sheet. Serve with the ranch dip on the side.

Notes

Don’t skip the double bake – the first bake dries out the batter and creates a crust, the second bake caramelizes the buffalo sauce. Pat the cauliflower dry before battering to help the batter stick. Use room temperature milk for a smoother batter. For best results, avoid overcrowding the baking sheet. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in the oven at 375°F for 8-10 minutes.
