This creamy loaded crockpot potato soup uses frozen hash browns for a foolproof, velvety texture. It’s a comforting, set-it-and-forget-it meal that tastes like you spent hours in the kitchen.

Ingredients

Scale
  • 1 bag (30 oz) frozen shredded hash browns
  • 4 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 8 oz cream cheese, softened and cubed
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 cup shredded sharp cheddar cheese
  • 8 slices thick-cut bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 3 green onions, sliced

Instructions

  1. Add the frozen shredded hash browns to a 6-quart slow cooker. Do not thaw.
  2. In a small bowl, mix onion powder, salt, black pepper, and smoked paprika. Sprinkle over hash browns. Pour chicken broth over top, ensuring hash browns are mostly submerged. Add minced garlic.
  3. Cook on low for 6-7 hours or high for 3-4 hours, until hash browns are tender and starting to fall apart.
  4. About 30 minutes before serving, stir in cream of chicken soup and cubed cream cheese. Stir until cream cheese is fully melted and incorporated (about 5 minutes).
  5. Stir in heavy cream until well combined. Let cook for another 10-15 minutes to heat through.
  6. Taste and adjust seasonings (salt, pepper, smoked paprika) as needed.
  7. While soup finishes, cook bacon until crispy, then crumble. Shred cheddar cheese if using a block. Slice green onions.
  8. Ladle soup into bowls. Top with cheddar cheese, crumbled bacon, sour cream, and green onions. Serve hot.

Notes

Do not thaw hash browns. Soften cream cheese to room temperature for smooth melting. For thicker soup, mash some hash browns against the side of the crockpot before adding cream. Soup thickens as it cools; thin with milk or broth when reheating. Leftovers keep up to 5 days in the refrigerator or freeze for up to 3 months.
