These soft, buttery sugar cookie bars are studded with candy corn and come together in about 30 minutes with no chilling or rolling. Perfect for fall gatherings, Halloween parties, or a cozy night in.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1½ cups (about 225g) candy corn
  • Optional: pinch of cinnamon or pumpkin pie spice

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides.
  2. Melt the butter in a large microwave-safe bowl or saucepan. Let cool for 2-3 minutes.
  3. Whisk in the granulated sugar and brown sugar until combined. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  4. In a separate medium bowl, whisk together flour, baking powder, salt, and optional spice.
  5. Add dry ingredients to wet ingredients in two additions, stirring with a rubber spatula until just combined. Do not overmix.
  6. Fold in 1 cup of candy corn gently. Reserve remaining ½ cup for topping.
  7. Transfer dough to prepared pan and press into an even layer. Sprinkle remaining candy corn on top, pressing lightly.
  8. Bake for 22-26 minutes, until edges are golden and center is set but soft. Cool in pan on a wire rack for 30 minutes, then lift out and cool completely before slicing.

Notes

For cleanest cuts, refrigerate cooled bars for 15 minutes before slicing. Bars taste even better the next day. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
