Ingredients

  • Tortilla chips (sturdy brands like Mission or On The Border)
  • Shredded cheese blend (cheddar and Monterey Jack)
  • Pre-cooked chicken strips or rotisserie chicken, shredded (optional)
  • Black beans, drained and rinsed
  • Fresh salsa or pico de gallo
  • Jalapeños, sliced
  • Sour cream or Greek yogurt (plain, for dipping)
  • Cilantro for garnish (optional)
  • Mini slider buns or small dinner rolls
  • Pre-cooked burger patties or veggie patties (frozen is fine)
  • Cheese slices (American or Swiss)
  • Pickles and sliced tomatoes
  • Ketchup, mustard, or favorite condiments
  • Baby carrots, cucumber slices, and cherry tomatoes
  • Prepared hummus (store-bought or homemade)
  • Cottage cheese or ranch dressing
  • Crackers or pita chips
  • Microwave popcorn
  • Mixed nuts or trail mix
  • Fresh fruit like grapes or apple slices

Instructions

  1. Prepare the Nachos (15 minutes): Preheat microwave or hot plate. Spread tortilla chips on a microwave-safe plate or small baking tray. Sprinkle shredded cheese evenly over chips, add black beans and shredded chicken if using. Microwave 1-2 minutes until cheese melts and bubbles. Top with fresh salsa, jalapeños, and a dollop of sour cream or Greek yogurt. Garnish with cilantro if desired.
  2. Make Mini Sliders (20 minutes): Heat pre-cooked burger patties in microwave or skillet over medium heat for 3-4 minutes per side. Slice slider buns and toast lightly on skillet for 1-2 minutes until golden. Assemble sliders with patty, cheese slice, pickles, tomato slices, and condiments. Serve warm.
  3. Prepare Veggie & Dip Platter (10 minutes): Wash and slice baby carrots, cucumbers, and halve cherry tomatoes. Arrange on a plate or tray with hummus and cottage cheese or ranch dressing in small bowls. Add crackers or pita chips for crunch.
  4. Bonus Snacks: Pop microwave popcorn according to package instructions. Arrange mixed nuts and fresh fruit nearby for snacking.

Notes

Keep an eye on cheese when melting to avoid burning. Toast slider buns for better texture. Rinse canned beans to reduce sodium and moisture. Use short bursts when melting cheese in microwave. Prepare veggie platters ahead for convenience. Store leftovers in airtight containers and reheat gently.
