Instructions

  1. Break 2-3 no-boil lasagna noodles into 1-inch square pieces.
  2. Spoon 2 tablespoons of marinara sauce into the bottom of a 12-ounce microwave-safe mug.
  3. Place a single layer of broken noodle pieces on top of the sauce.
  4. Drop 1 tablespoon of ricotta cheese on the noodles and spread gently. Sprinkle a tiny pinch of Parmesan cheese on top.
  5. Add another 2 tablespoons of marinara sauce, another layer of noodles, another tablespoon of ricotta, and another pinch of Parmesan.
  6. For the final layer, add the remaining marinara sauce, ensuring all noodles are covered. Top with a generous layer of shredded mozzarella and a final dusting of Parmesan.
  7. Place the mug on a microwave-safe plate and microwave on high for 2 minutes. Check if noodles are tender; if not, microwave in 30-second increments until done (about 2 minutes 30 seconds total).
  8. Let the mug lasagna rest for 1-2 minutes before serving.
