Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (14.5 ounces) diced tomatoes with green chiles
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) whole kernel corn, drained
  • 4 cups low-sodium beef broth
  • Optional toppings: shredded cheddar cheese, sour cream, sliced green onions, crushed tortilla chips, fresh cilantro, lime wedges

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4 to 5 minutes until soft and translucent.
  2. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle in the ranch seasoning and taco seasoning. Stir and cook for about 1 minute to toast the spices.
  4. Pour in both cans of diced tomatoes with their juices. Stir to combine, scraping up any browned bits from the bottom of the pot.
  5. Add the drained and rinsed black beans, kidney beans, and pinto beans. Stir gently.
  6. Add the drained corn and stir again.
  7. Pour in the beef broth and stir until well combined.
  8. Bring the soup to a gentle boil over medium-high heat (about 5 to 7 minutes).
  9. Reduce the heat to low, cover the pot with a lid slightly ajar, and let it simmer for 15 to 20 minutes.
  10. Taste and adjust seasoning if needed.
  11. Ladle into bowls and top with desired garnishes.

Notes

Rinse the beans to remove excess sodium and improve broth clarity. Toast the seasoning packets in oil for deeper flavor. For a thicker soup, mash one cup of beans before adding broth. Leftovers keep for up to 5 days in the refrigerator or freeze for up to 3 months.
