A quick and easy homemade snack featuring peanut butter-coated banana rolls drizzled with melted chocolate, perfect for last-minute cravings or parties.

Ingredients

Scale
  • 2 ripe bananas, peeled and firm but soft enough to roll
  • 1/2 cup creamy peanut butter
  • 1/4 cup semisweet chocolate chips or chopped chocolate bar
  • Optional: crushed nuts (peanuts or almonds) or shredded coconut for topping
  • Optional: 1 tablespoon honey or maple syrup for sweeter drizzle

Instructions

  1. Peel the bananas and slice each one in half crosswise. Then slice each half into thirds lengthwise to get long, thin banana logs about 3-4 inches long.
  2. Spread about 1 tablespoon of creamy peanut butter evenly over each banana piece.
  3. Gently roll each peanut butter-coated banana piece tightly, sushi-style, pressing lightly to keep together.
  4. Melt the chocolate chips or chopped chocolate in a microwave-safe bowl in 20-second bursts, stirring until smooth, or melt over a double boiler.
  5. If using, mix honey or maple syrup into the melted chocolate for a sweeter drizzle.
  6. Drizzle the melted chocolate over the banana sushi rolls using a spoon or piping bag.
  7. Sprinkle optional crushed nuts or shredded coconut over the warm chocolate.
  8. Serve immediately or chill in the fridge for 10-15 minutes to let the chocolate set slightly.

Notes

Use slightly underripe bananas for better shape retention. Warm peanut butter slightly if too stiff to spread. Keep knife clean and sharp for neat slices. Melt chocolate gently to preserve shine. Store sushi rolls in airtight container with parchment paper layers to prevent sticking. Freeze rolls for a refreshing snack. Customize with spices or nut-free butters as desired.
