These crispy firecracker jalapeño poppers are bacon-wrapped appetizers with a spicy kick, creamy cheese filling, and a perfect crunch. Easy to make and perfect for parties or weeknight treats.

  • 12 medium-sized fresh jalapeños, washed and halved lengthwise
  • 8 oz (225g) full-fat cream cheese, softened
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 12 slices thin-cut bacon
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp honey
  • Salt and black pepper to taste
  • Optional: chopped fresh cilantro or green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice each jalapeño in half lengthwise and scoop out seeds and membranes carefully.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, smoked paprika, honey, salt, and pepper until smooth.
  4. Fill each jalapeño half with about 1 tablespoon (15g) of the cheese mixture.
  5. Wrap each stuffed jalapeño half with a slice of bacon, securing with a toothpick if needed.
  6. Arrange the poppers seam side down on the prepared baking sheet.
  7. Bake for 20-25 minutes until bacon is crispy and filling is bubbly and slightly golden. Flip poppers halfway through baking for even crispiness.
  8. Remove from oven and let rest for 5 minutes.
  9. Garnish with chopped cilantro or green onions before serving.

Notes

Drain cream cheese well and bring to room temperature before mixing to avoid lumps. Wrap bacon tightly and secure with toothpicks if needed. Flip poppers halfway through baking for even crispiness. Let poppers rest 5 minutes after baking to set filling. Tent with foil if bacon browns too fast.
