  • 1/2 teaspoon chili powder (optional)
  • 1 teaspoon salt (kosher or sea salt)
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Rinse the chicken wings under cold water and pat them very dry with paper towels.
  2. In a large mixing bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, chili powder (if using), salt, and black pepper. Stir well to blend.
  3. Drizzle olive oil over the wings and toss to coat evenly. Sprinkle the dry rub over the wings and toss until every piece is well covered.
  4. Preheat the grill to medium-high heat (around 400°F / 200°C). Oil the grates lightly to prevent sticking.
  5. Place wings on the grill skin side down, leaving space between pieces. Grill for 6-7 minutes, then flip carefully using tongs.
  6. Grill the other side for another 6-7 minutes, turning every few minutes to avoid burning and achieve even color. Manage flare-ups by moving wings to indirect heat if needed.
  7. Check for doneness when the internal temperature reaches 165°F (74°C) and the skin is crispy with caramelized spots and clear grill marks.
  8. Transfer wings to a plate or tray and let rest for 5 minutes before serving.
