  • 1/2 teaspoon salt

  • 1/2 cup Frank’s RedHot sauce
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon honey
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together the flour, baking powder, garlic powder, smoked paprika, salt, and pepper. Slowly add cold water while whisking until the batter is smooth and slightly thick but still pourable (about 3-4 minutes).
  3. Dip each cauliflower floret into the batter, ensuring it is fully coated. Shake off excess batter and place florets on the baking sheet in a single layer with space between each piece.
  4. Bake the cauliflower for 20 minutes, flipping halfway through, until golden and starting to crisp.
  5. While baking, melt the butter in a small saucepan over medium heat. Remove from heat and stir in the hot sauce and honey until smooth.
  6. Remove cauliflower from oven and toss florets in the buffalo sauce until evenly coated. Return to the baking sheet.
  7. Bake the coated cauliflower for another 10-12 minutes until edges are crispy but not burnt.
  8. While cauliflower finishes baking, mix sour cream, mayonnaise, crumbled blue cheese, lemon juice, garlic powder, salt, and pepper in a bowl. Chill in the fridge until serving.
  9. Serve the crispy buffalo cauliflower bites with a generous bowl of blue cheese dip. Garnish with chopped fresh parsley or chives if desired.
