A quick and easy breakfast pizza featuring a crispy everything bagel crust topped with bacon, eggs, and melted cheese. Perfect for busy mornings or casual brunch gatherings.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon instant yeast
  • ½ teaspoon sugar
  • ¾ teaspoon salt
  • ½ cup warm water (about 110°F / 43°C)
  • 1 tablespoon olive oil
  • 2 tablespoons everything bagel seasoning
  • 6 slices bacon (thick-cut preferred)
  • 3 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons cream cheese, softened (optional)
  • Freshly ground black pepper, to taste
  • Chopped chives or green onions for garnish (optional)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine 1 ½ cups (180g) all-purpose flour, 1 teaspoon instant yeast, ½ teaspoon sugar, and ¾ teaspoon salt. Stir to combine evenly. Add ½ cup (120ml) warm water (around 110°F/43°C) and 1 tablespoon olive oil. Mix until a shaggy dough forms, about 3 minutes.
  2. Knead the Dough: Turn the dough onto a lightly floured surface. Knead for 5 to 7 minutes until smooth and elastic. Add flour a tablespoon at a time if sticky. The dough should bounce back when pressed gently.
  3. First Rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 45 minutes to 1 hour until doubled in size.
  4. Preheat Oven & Prepare Toppings: Preheat oven to 450°F (232°C). Cook bacon in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels. In the same skillet, fry eggs sunny side up or over easy, seasoning with black pepper. Set aside.
  5. Shape the Dough: Punch down the risen dough and place on a parchment-lined baking sheet. Roll or press into a 10-inch circle or rectangle about ¼-inch thick. Sprinkle 2 tablespoons everything bagel seasoning evenly and press into dough.
  6. Add Cheese and Bake: Spread 2 tablespoons softened cream cheese over dough (optional). Sprinkle 1 cup shredded sharp cheddar cheese evenly on top. Bake for 10 to 12 minutes until crust is golden and cheese bubbly.
  7. Top with Bacon and Eggs: Remove pizza from oven. Arrange crispy bacon slices and fried eggs on top. Sprinkle chopped chives or green onions if desired.
  8. Serve: Slice and serve immediately while warm and crispy.

Notes

Do not skip kneading the dough properly for best texture. Adjust oven temperature if needed to avoid burning the bagel seasoning. Cook eggs separately to avoid overcooking when baking. For softer crust, brush edges with olive oil before baking. Dough can be prepared ahead and refrigerated overnight.
