These crispy, flaky hand pies are filled with juicy strawberry filling and cooked quickly in an air fryer for a fuss-free festive treat.

  • 1 sheet puff pastry (thawed if frozen, about 8x8 inches)
  • 1 egg, beaten (for egg wash)
  • 1 tbsp granulated sugar (optional, for sprinkling)
  • 1 cup fresh strawberries, hulled and chopped (or frozen, thawed)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 1/2 tsp vanilla extract

Instructions

  1. In a mixing bowl, combine chopped strawberries, sugar, lemon juice, cornstarch, and vanilla extract. Stir gently and set aside to macerate.
  2. On a lightly floured surface, unfold puff pastry sheet. Cut into four equal squares (about 4×4 inches each) if desired.
  3. Spoon 1-2 tablespoons of strawberry filling onto the center of each square, leaving a border. Brush edges with water to seal.
  4. Fold pastry over filling to form a triangle or rectangle and press edges firmly with a fork.
  5. Brush tops with beaten egg and sprinkle with sugar if desired.
  6. Preheat air fryer to 350°F (175°C). Arrange pies in a single layer without touching. Air fry for 12-15 minutes, turning halfway, until golden and puffed.
  7. Remove and cool on a rack for 5 minutes before serving.

Notes

Do not overfill pies to avoid leaking. Keep puff pastry cold for best puffing. Turn pies halfway through cooking for even browning. Let pies cool slightly before eating to avoid burning. Cook in batches if air fryer basket is small. For dairy-free, substitute egg wash with almond or coconut milk. Frozen pies can be cooked from frozen with extra time.
