Transform humble pumpkin seeds into a dangerously addictive fall snack with this quick and easy air fryer recipe. Coated in maple syrup, cinnamon, and butter, these seeds come out perfectly crunchy every time.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds, cleaned and patted dry
  • 2 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  1. Clean and dry your pumpkin seeds. If using seeds from a fresh pumpkin, separate them from the stringy pulp by rinsing in a colander under cool water. Pick out any remaining bits of pumpkin flesh. Spread the seeds on a clean kitchen towel and pat them completely dry. Let them air dry for about 10 minutes while you preheat the air fryer.
  2. Preheat your air fryer to 325°F (163°C). Most air fryers need about 3-5 minutes to preheat.
  3. Mix the coating. In a mixing bowl, combine 2 tablespoons of pure maple syrup, 1 tablespoon of melted unsalted butter, 1 teaspoon of ground cinnamon, and ½ teaspoon of salt. Whisk until smooth and well combined.
  4. Toss the seeds in the coating. Add the dried pumpkin seeds to the bowl and stir until every seed is evenly coated.
  5. Transfer to the air fryer basket. Spread the coated seeds in a single layer in the air fryer basket. Do not overcrowd.
  6. Cook for 8-10 minutes, shaking the basket halfway through. At the 4-minute mark, pull out the basket and give it a good shake or stir the seeds with a spatula. The seeds are done when they’re golden brown and smell wonderfully toasty.
  7. Check for doneness. The seeds should be fragrant and lightly browned. They’ll continue to crisp up as they cool.
  8. Cool completely before serving. Spread the cooked seeds on a plate or baking sheet in a single layer and let them cool for at least 10 minutes.

Notes

Don’t skip drying the seeds thoroughly before cooking—wet seeds steam instead of crisp. Every air fryer runs differently; check seeds at 6 minutes and adjust. Let seeds cool completely for maximum crunch. Store in an airtight container at room temperature for up to 2 weeks. For a vegan option, substitute butter with coconut oil.
