This creamy overnight peanut butter banana oats recipe is proof that the best things in life are often the simplest. It came from a late-night craving and a willingness to experiment, and it has become a staple in my kitchen. It is healthy, delicious, and so easy that it almost feels like cheating.

  • 1/2 cup (45g) rolled oats
  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) Greek yogurt
  • 2 tablespoons (32g) natural peanut butter
  • 1 medium very ripe banana
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana: In your jar or a small bowl, mash the ripe banana with a fork until it is completely smooth, paste-like consistency.
  2. Add the wet ingredients: To the mashed banana, add the milk, Greek yogurt, peanut butter, maple syrup (or honey), and vanilla extract if using. Stir until the peanut butter is fully incorporated and the mixture is smooth and creamy.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir well to combine, making sure every oat is coated.
  4. Seal and refrigerate: Put the lid on your jar or container and seal it tightly. Refrigerate for at least 6 hours, but overnight (8-12 hours) is best.
  5. Serve and enjoy: In the morning, take the jar out of the fridge. Give it a good stir. If too thick, stir in a splash of milk. Top with sliced fresh banana, a drizzle of extra peanut butter, a sprinkle of granola, or dark chocolate chips if desired.

Notes

Mash the banana thoroughly for best texture. Use a 1:1 liquid-to-oats ratio. Let rest at least 6 hours. Stir before eating. Adjust sweetness based on banana ripeness. Store in fridge for up to 5 days. Do not freeze.
