  • 1 medium ripe banana (the spottier the better)
  • 2 tablespoons creamy peanut butter (natural preferred)
  • 1/2 cup milk of choice (dairy, oat, or almond milk; avoid skim)
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1 tablespoon chia seeds (optional but recommended)
  • 1 teaspoon honey or maple syrup (optional, for extra sweetness)
  • 1 pinch salt
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Mash the banana in the bottom of your jar using a fork until mostly smooth with a few small chunks.
  2. Add the peanut butter to the jar. If thick, microwave for 10 seconds to soften.
  3. Pour in the milk and Greek yogurt.
  4. Add the rolled oats, chia seeds (if using), honey or maple syrup, salt, and cinnamon.
  5. Stir everything together with your fork until well combined, scraping the bottom and corners.
  6. Put the lid on and refrigerate for at least 6 hours, preferably overnight.
  7. In the morning, take the jar out of the fridge and give it a good stir. If too thick, add a splash of milk; if too thin, add more chia seeds.
  8. Add toppings before eating, such as sliced banana, extra peanut butter, cinnamon, chopped nuts, or dark chocolate chips.

Notes

For best texture, use rolled oats (not quick or steel-cut). The banana should be very ripe with brown spots. Toppings should be added just before serving, not the night before. The flavors improve on day 2 and 3. For meal prep, make up to 5 jars and store in the fridge for up to 5 days.
