  • 1 cup milk of choice (240ml)
  • 3 tablespoons creamy peanut butter (48g)
  • 1 medium ripe banana, mashed + sliced for topping
  • ¼ cup plain Greek yogurt or cottage cheese (60g)
  • 12 tablespoons maple syrup or honey (15-30ml)
  • 1 tablespoon chia seeds (12g, optional)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • Optional toppings: sliced banana, drizzle of peanut butter, chopped peanuts, dark chocolate chips, cinnamon, whipped cream

Instructions

  1. Mash the ripe banana thoroughly in a mixing bowl with a fork until mostly smooth with a few tiny lumps.
  2. Add milk, peanut butter, yogurt or cottage cheese, maple syrup, vanilla extract, and salt to the mashed banana. Whisk until fully combined and no peanut butter streaks remain. If using cottage cheese, blend with milk first for smoother texture.
  3. Pour in rolled oats and chia seeds. Stir well with a spoon or spatula until every oat is coated. Stir for about 30 seconds until uniform.
  4. Divide the mixture evenly into mason jars or airtight containers, leaving about an inch of space at the top for expansion. For layering, add half the oat mixture, then banana slices, then remaining oats.
  5. Seal jars tightly and refrigerate for at least 6 hours, ideally 8-12 hours (overnight).
  6. In the morning, stir the oats well. If too thick, add a splash of milk. Top with sliced banana, peanut butter drizzle, chopped peanuts, or other desired toppings. Serve cold or microwave for 30-45 seconds for warm oats.

Notes

Don’t skip the salt—it balances sweetness and enhances flavor. Use room temperature ingredients to prevent peanut butter from seizing. Let oats rest the full 8-12 hours for best texture. Make a double batch for up to 5 days of breakfasts. Stir before eating as liquid separates overnight. For thicker oats, reduce milk; for thinner, add more milk or chia seeds.
