This creamy one-pot shrimp alfredo pasta is a quick and easy weeknight dinner that comes together in about 30 minutes. The sauce is velvety smooth, the shrimp are perfectly cooked, and the whole thing cooks in one pot for minimal cleanup.

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 2 cups low-sodium chicken broth
  • 8 ounces fettuccine pasta
  • 1 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Place a large pot over medium-high heat. Add 1 tablespoon of butter. Once melted and sizzling, add the shrimp in a single layer. Cook for 1-2 minutes per side until pink and opaque. Remove shrimp to a plate and set aside.
  3. Reduce heat to medium. Add remaining 2 tablespoons of butter. Once melted, add minced garlic and cook for 30-60 seconds, stirring constantly, until fragrant.
  4. Pour in heavy cream and chicken broth. Stir, scraping up any browned bits from the bottom. Bring to a gentle simmer.
  5. Add fettuccine to the pot, pressing noodles down to submerge. Bring back to a simmer, then reduce heat to medium-low.
  6. Cook pasta for 10-12 minutes, stirring occasionally, until tender and sauce has thickened.
  7. Remove pot from heat. Stir in freshly grated Parmesan until melted and smooth. Gently fold in cooked shrimp.
  8. Squeeze in fresh lemon juice and stir. Taste and adjust salt and pepper as needed.
  9. Let pasta rest for 2-3 minutes before serving. Garnish with fresh parsley and red pepper flakes if desired.

Notes

Remove pot from heat before adding Parmesan to prevent sauce from breaking. For a lighter version, use half-and-half instead of heavy cream. For dairy-free, use full-fat canned coconut milk and dairy-free butter. For gluten-free, use gluten-free fettuccine and certified gluten-free broth.
