  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams), pounded slightly for even cooking
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup (240 ml) low sodium chicken broth
  • 3/4 cup (180 ml) heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet. Add chicken breasts and cook undisturbed for 5 minutes until golden brown. Flip and cook another 4-5 minutes. Remove chicken and set aside.
  3. Lower heat to medium. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Stir constantly for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Pour in 1 cup chicken broth, scraping the bottom of the pan to loosen browned bits. Add 3/4 cup heavy cream, 1 teaspoon Italian seasoning, and optional red pepper flakes. Stir gently and let the sauce come to a gentle simmer for 3-5 minutes.
  5. Return chicken breasts to the pan, nestling them in the sauce. Reduce heat to low, cover the skillet, and simmer gently for 10 minutes to finish cooking the chicken.
  6. Uncover, sprinkle 1/2 cup grated Parmesan cheese over the chicken and sauce. Stir gently to melt cheese and thicken the sauce. Cook uncovered for another 2-3 minutes. Ensure chicken is cooked through (internal temperature 165°F/74°C).
  7. Remove from heat, garnish with chopped fresh basil, and serve immediately with your favorite side.

Notes

If sauce is too thin, remove chicken and simmer sauce longer; if too thick, add a splash more broth or cream. Use chicken thighs for juicier meat with adjusted cooking time. For dairy-free, substitute coconut cream and vegan Parmesan. Rehydrate dry sun-dried tomatoes if oil-packed are unavailable.
