  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed recommended)
  • 1 cup chicken broth (low sodium recommended)
  • 1 cup heavy cream (or substitute half-and-half for lighter version)
  • 1/2 cup grated Parmesan cheese (freshly grated preferred)
  • 1 teaspoon dried Italian herbs (or mix of oregano and basil)
  • Red pepper flakes, a pinch (optional)
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. (Approx. 5 minutes)
  2. Pour 2 tablespoons of olive oil into a skillet and warm over medium-high heat until shimmering but not smoking. (2-3 minutes)
  3. Place the chicken breasts in the hot skillet, cooking for about 5-6 minutes on each side until golden brown and cooked through (internal temp 165°F / 74°C). Remove and set aside, tented with foil. (12-15 minutes)
  4. Lower heat to medium. Add minced garlic and chopped shallots to the skillet. Stir frequently and cook until fragrant and softened, about 2 minutes.
  5. Stir in chopped sun-dried tomatoes and dried Italian herbs. Cook with aromatics for 1-2 minutes to release flavors.
  6. Pour in chicken broth, scraping up browned bits. Let simmer and reduce by half, about 5 minutes.
  7. Stir in heavy cream and Parmesan cheese. Simmer gently until sauce thickens slightly, about 3-4 minutes. Season with salt, pepper, and optional red pepper flakes.
  8. Nestle chicken breasts back into the sauce. Spoon sauce over top, cover with lid or foil, and let meld over low heat for 3-5 minutes.
  9. Garnish with fresh basil or parsley before serving.

Notes

For thicker sauce, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir in, cooking 1-2 minutes. Use medium or medium-low heat to prevent cream from breaking. Chicken thighs can be used but adjust cooking time. Dairy-free version uses coconut milk and dairy-free Parmesan. Sauce pairs well with pasta, mashed potatoes, or polenta.
