A creamy, loaded potato salad with crispy bacon, sharp cheddar, and a tangy ranch dressing. This happy accident turned into the only potato salad you’ll ever need.

Ingredients

  • 2 pounds baby potatoes (Yukon Gold or red)
  • 1 pound thick-cut bacon
  • 1 cup sour cream (full-fat)
  • 1/2 cup mayonnaise (Duke’s or Hellmann’s)
  • 1 packet (1 ounce) ranch seasoning (e.g., Hidden Valley)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. Cook the bacon: Place bacon strips in a cold skillet. Turn heat to medium and cook, flipping occasionally, until crispy (8-10 minutes). Transfer to paper towels to drain. Once cool, crumble or chop into bite-sized pieces. Reserve 2 tablespoons bacon fat if desired.
  2. Microwave the potatoes: Scrub baby potatoes clean. Place in a large microwave-safe bowl with 2 tablespoons water. Cover with a plate or plastic wrap (leave a small vent). Microwave on high for 8-10 minutes until tender when pierced with a fork. Let cool a few minutes.
  3. Halve the potatoes: When cool enough to handle, cut potatoes in half (or quarters if large). Place in a large mixing bowl.
  4. Make the dressing: In a medium bowl, whisk together sour cream, mayonnaise, and ranch seasoning until smooth. If too thick, add a tablespoon of milk or buttermilk.
  5. Combine the salad: Pour dressing over warm potatoes. Add shredded cheddar, crumbled bacon, and sliced green onions. Fold gently with a rubber spatula. Season with black pepper and a pinch of salt if needed.
  6. Chill (optional but recommended): Cover and refrigerate for at least 30 minutes before serving to meld flavors.
  7. Garnish and serve: Stir gently. Garnish with extra bacon, green onions, and black pepper. Serve cold or at room temperature.

Notes

For best flavor, make ahead and refrigerate overnight. Reserve some bacon and green onions for garnish. If salad seems dry after chilling, stir in a tablespoon of milk or extra sour cream.
