A quick and easy one-pot lasagna soup with creamy ricotta dollops, perfect for weeknight dinners or gatherings. Ready in 30 minutes with simple ingredients.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage (mild or spicy)
  • 1 large yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • 6 cups low-sodium chicken broth
  • 1 can (14.5 oz) crushed tomatoes
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounces lasagna noodles, broken into 1-2 inch pieces (about 6–7 noodles)
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons fresh parsley, chopped
  • ¼ teaspoon salt
  • Pinch of black pepper

Instructions

  1. Brown the meat (5 minutes): Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage, breaking it up, and cook until browned, about 5 minutes. Transfer to a plate, leaving 1 tablespoon drippings.
  2. Sauté the aromatics (3 minutes): Reduce heat to medium. Add diced onion and cook until softened, about 3 minutes, scraping up browned bits. Add garlic, oregano, and red pepper flakes; cook 30 seconds until fragrant.
  3. Build the broth (2 minutes): Pour in chicken broth, crushed tomatoes, and diced tomatoes with juices. Stir, scraping bottom. Add salt and pepper. Bring to a boil.
  4. Cook the noodles (10-12 minutes): Stir in broken lasagna noodles. Reduce heat to a gentle simmer. Cook until noodles are al dente, about 10-12 minutes, stirring occasionally.
  5. Add meat and creamy elements (3 minutes): Return sausage to pot. Stir in heavy cream, mozzarella, and Parmesan. Stir until cheeses melt, about 2 minutes. Do not boil after adding cream.
  6. Make ricotta dollops (2 minutes): In a small bowl, mix ricotta, parsley, salt, and pepper until combined.
  7. Serve and garnish: Ladle soup into bowls. Drop a generous dollop of ricotta mixture into each bowl. Sprinkle with extra parsley and red pepper flakes if desired. Serve immediately.

Notes

The soup thickens as it sits because noodles absorb liquid. If making ahead, cook noodles separately and add to individual bowls before pouring hot broth. Taste for salt at the end as cheese adds saltiness. If ricotta dollops sink, simmer soup a few extra minutes to reduce.
