  • 1 teaspoon onion powder
  • 1/2 cup heavy cream (optional)
  • 23 green onions, sliced thinly

Instructions

  1. Place 2 pounds of boneless, skinless chicken breasts into the slow cooker, spreading them evenly.
  2. In a medium bowl, combine 8 ounces softened cream cheese, 1 packet ranch seasoning mix, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Blend until smooth. Stir in 1/2 cup heavy cream if using.
  3. Pour the cream cheese mixture evenly over the chicken breasts in the slow cooker and spread gently with a spatula.
  4. Cover and cook on low for 4-6 hours until the chicken is tender and easy to shred.
  5. Remove the chicken breasts and shred using two forks or a hand mixer. Return shredded chicken to the slow cooker and stir to coat with sauce.
  6. Stir in 1 cup shredded cheddar cheese and 6 slices cooked, crumbled bacon until cheese melts.
  7. Sprinkle 2-3 sliced green onions on top and stir gently.
  8. Serve hot, ideally over cauliflower rice or steamed vegetables.
