Instructions

  1. Wash and slice the cucumbers into thin rounds, about ⅛-inch thick. Leave the skin on.
  2. Place the slices in a colander set over a bowl. Sprinkle with 1 teaspoon kosher salt and toss gently. Let sit for 10 minutes to draw out moisture.
  3. Meanwhile, make the dressing: In a medium bowl, whisk together Greek yogurt, white wine vinegar, olive oil, fresh dill, garlic powder, sugar, ½ teaspoon salt, and black pepper until smooth and creamy.
  4. After 10 minutes, gently pat the cucumber slices dry with a clean kitchen towel or paper towels to remove excess moisture.
  5. Transfer the dried cucumber slices to a large bowl. Add the dressing and toss gently until every slice is coated. If using red onion, add it now and toss again.
