This creamy crockpot white chicken chili is a weeknight lifesaver that doesn’t sacrifice flavor for convenience. With only 20 minutes of active prep, the slow cooker does all the work, delivering a hearty, comforting meal that feels like a hug from the inside out.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts (or thighs for a richer flavor; I often use a mix)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 (15-oz) cans cannellini beans, drained and rinsed
  • 1 (15-oz) can sweet corn, drained
  • 1 (4-oz) can diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream or half-and-half
  • Juice of 1 lime
  • Optional toppings: shredded Monterey Jack cheese, fresh cilantro, sliced avocado, tortilla strips, a dollop of sour cream

Instructions

  1. Sauté the aromatics (5 minutes): Heat the olive oil in your large skillet over medium heat. Add the diced onion and cook until it’s soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until it’s fragrant. Don’t let the garlic burn—it gets bitter.
  2. Layer the slow cooker (5 minutes): Place the chicken breasts in the bottom of your slow cooker. Top with the sautéed onions and garlic. Add the drained cannellini beans, corn, and diced green chiles. Pour in the chicken broth.
  3. Add the seasonings (2 minutes): Sprinkle the cumin, oregano, chili powder, salt, and pepper over everything. Give it a gentle stir to combine, making sure the spices aren’t just sitting on top.
  4. Slow cook (4 hours on high or 7-8 hours on low): Cover and cook. I personally prefer cooking it on low for 7 hours—the chicken comes out incredibly tender and shreddable. If you’re in a hurry, high for 4 hours works, but the texture won’t be quite as silky.
  5. Shred the chicken (5 minutes): Once the cooking time is up, carefully remove the chicken breasts to a cutting board. Use two forks to shred the meat. It should fall apart easily. Return the shredded chicken to the slow cooker.
  6. Create the creamy base (5 minutes): This is the trick. Scoop out about 1.5 cups of the chili (beans, corn, and some broth) into a blender or use your immersion blender right in the pot. Blend until smooth and creamy. Stir this blended mixture back into the slow cooker.
  7. Finish with cream and lime (2 minutes): Stir in the heavy cream and lime juice. Let it heat through for about 5 minutes. Taste and adjust the salt and pepper. The lime juice is non-negotiable—it cuts through the richness and makes all the flavors pop.
  8. Serve immediately: Ladle the chili into bowls and top with your favorite garnishes.

Notes

Don’t skip the sauté step—it builds flavor. Watch your liquid level; if using frozen corn, it releases water. The blending step is key for creamy texture without too much cream. Shred chicken while hot for best results. Always taste before serving and adjust seasoning.
