  • 2 cups cooked chicken, shredded
  • ½ cup buffalo sauce (such as Frank’s RedHot)
  • ½ cup ranch dressing
  • 1 cup shredded cheddar cheese, divided
  • ½ cup shredded mozzarella cheese
  • 34 green onions, sliced (for garnish)
  • Optional: pinch of garlic powder, dash of smoked paprika, or 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soften the cream cheese: Remove from fridge 30 minutes before starting, or microwave on low for 15-20 seconds.
  3. Beat the cream cheese in a mixing bowl with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down sides.
  4. Add the buffalo sauce and ranch dressing. Beat on low speed until combined.
  5. Fold in the shredded chicken, ½ cup cheddar cheese, and ½ cup mozzarella cheese until evenly distributed.
  6. Transfer the mixture to a greased 9×13 baking dish. Spread evenly and sprinkle remaining ½ cup cheddar cheese on top.
  7. Bake for 20 minutes until hot and bubbly around the edges. For a browned top, broil for the last 2 minutes.
  8. Let rest for 5 minutes before serving.
  9. Garnish with sliced green onions and serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best results, use room temperature ingredients. The dip can be assembled up to 24 hours in advance and refrigerated; add 10 minutes to baking time if starting cold. Leftovers keep in the refrigerator for up to 4 days and can be reheated in the microwave or oven. The dip can also be frozen unbaked for up to 3 months.
