This hearty and creamy slow cooker soup is made with smoked sausage, potatoes, and vegetables. It’s a completely hands-off meal that’s perfect for busy weeknights and tastes even better the next day.

  • 1 lb smoked sausage (beef or pork), sliced into 1/2-inch rounds
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 lbs russet potatoes (about 45 medium), cut into 1-inch cubes
  • 2 large carrots, peeled and diced
  • 2 ribs celery, diced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 cup heavy cream (optional)
  • Fresh parsley, for garnish

Instructions

  1. Brown the sausage: Heat a large skillet over medium-high heat. Add the sliced sausage in a single layer and cook without moving for 2 minutes, then stir and cook for another 2-3 minutes until browned. Transfer to the slow cooker using a slotted spoon, leaving the rendered fat in the skillet.
  2. Sauté the aromatics: In the same skillet, add the diced onion and cook for 2 minutes, scraping up browned bits. Add the minced garlic and cook for 30 seconds until fragrant. Transfer to the slow cooker.
  3. Layer the vegetables: Add the diced carrots, celery, and cubed potatoes to the slow cooker on top of the sausage and onions.
  4. Add the seasonings: Sprinkle the dried thyme, smoked paprika, salt, and black pepper over the vegetables. Stir gently to distribute.
  5. Pour in the broth: Pour the chicken broth over everything. The liquid should almost cover the ingredients; add a little more broth or water if needed, but do not overfill.
  6. Cook low and slow: Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until the potatoes are fork-tender and the carrots are soft.
  7. The creamy secret: Turn off the slow cooker. Use an immersion blender to blend about one-third to one-half of the soup right in the pot, or scoop out 2 cups, mash with a potato masher, and stir back in.
  8. Stir in the cream: Pour in the heavy cream and stir until fully incorporated. Let the soup sit for 5 minutes to meld flavors. Taste and adjust salt and pepper if needed.
  9. Serve and garnish: Ladle into bowls, top with fresh parsley, and serve hot with crusty bread or a side salad.

Notes

Don’t skip browning the sausage—it adds deep flavor. Cut potatoes into uniform 1-inch cubes for even cooking. Use low-sodium broth and go easy on salt initially. Blend carefully to avoid splashing. Let the soup rest 10-15 minutes before serving for best flavor.
