These cozy pumpkin oat muffins are sweetened with maple syrup and pumpkin, using no refined sugar. They’re hearty, moist, and perfect for fall mornings, capturing the warmth of a classic autumn bake.

  • 1 cup (245g) pumpkin puree
  • ⅓ cup (80ml) maple syrup
  • 2 large eggs, room temperature
  • ¼ cup (60ml) coconut oil, melted
  • ¼ cup (60ml) milk (any kind)
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Optional: ½ cup chopped pecans or walnuts, ¼ cup dark chocolate chips, or ¼ cup dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Grind the rolled oats in a blender or food processor until they turn into a fine powder (about 30-45 seconds). Set aside.
  3. In a large bowl, whisk together the oat flour, pumpkin pie spice, baking powder, baking soda, and salt.
  4. In a medium bowl, whisk together the pumpkin puree, maple syrup, eggs, melted coconut oil, milk, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and fold gently with a rubber spatula until just combined. Do not overmix. Fold in any optional mix-ins if using.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden brown and spring back when lightly touched.
  8. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

For extra flavor, toast the rolled oats at 350°F for 5-7 minutes before grinding. Use room temperature ingredients to prevent coconut oil from solidifying. Muffins can be stored in an airtight container at room temperature for up to 4 days or frozen for up to 3 months. They taste even better on day two.
