These creamy, no-cook overnight oats combine peanut butter and chocolate chips for a comforting breakfast that comes together in just 5 minutes. Perfect for busy mornings, meal prep, or a crowd-pleasing potluck dish.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (any kind)
  • 3 tablespoons (48g) creamy peanut butter
  • 2 tablespoons (30ml) maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt
  • 3 tablespoons (45g) semi-sweet chocolate chips
  • Optional: 1 tablespoon (16g) extra peanut butter for drizzling
  • Optional: Chocolate shavings or cacao nibs for garnish

Instructions

  1. In a small mixing bowl, whisk together 1 cup milk, 3 tablespoons creamy peanut butter, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and a pinch of salt until smooth and slightly frothy (about 30 seconds). If peanut butter is stubborn, microwave the milk for 15 seconds first.
  2. Sprinkle 1 tablespoon chia seeds into the peanut butter milk mixture and whisk again to prevent clumps.
  3. Place 1 cup rolled oats in a mason jar or airtight container. Pour the peanut butter milk mixture over the oats and stir well, ensuring every oat is coated.
  4. Fold in 3 tablespoons semi-sweet chocolate chips, distributing evenly. Reserve a few chips for topping if desired.
  5. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats well. If too thick, add a splash of milk. If too thin, let sit longer or add more chia seeds.
  7. Top with optional extra peanut butter drizzle, reserved chocolate chips, or a pinch of flaky sea salt. Serve cold.

Notes

For best texture, use rolled oats (not quick-cooking or steel-cut). Chia seeds are essential for the pudding-like consistency. Warm peanut butter slightly for easier mixing. Make a batch of 3-4 jars on Sunday for weekday breakfasts. Store in fridge up to 5 days; do not freeze.
