Instructions

  1. Brown the butter: Place 1/2 cup (113g) unsalted butter in a medium saucepan over medium heat. Stir frequently until it foams and turns golden brown with a nutty aroma. Remove from heat and pour into a large mixing bowl to cool slightly.
  2. Mash the bananas: Peel and mash 3 ripe bananas in the same or a separate bowl until mostly smooth with some lumps.
  3. Mix wet ingredients: Add 3/4 cup (150g) granulated sugar, 1 large egg, and 1 teaspoon vanilla extract to the mashed bananas and browned butter. Stir until combined. Fold in Greek yogurt if using.
  4. Combine dry ingredients: In a small bowl, whisk together 1 3/4 cups (220g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Add dry to wet: Slowly add dry ingredients to wet mixture, stirring gently just until combined. Avoid overmixing.
  6. Fold in chocolate chips and optional nuts gently.
  7. Prepare and bake: Preheat oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan. Pour batter into pan and smooth the top. Bake for 60-65 minutes or until a toothpick inserted comes out clean or with a few moist crumbs.
  8. Cool and serve: Let bread cool in pan for 15 minutes, then transfer to a cooling rack. Slice once completely cool.
