These honey mustard chicken thighs are a one-pan wonder with a sticky, sweet-tangy glaze. Perfect for cozy nights, they require simple ingredients and minimal cleanup.

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs total)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ⅓ cup honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • ½ cup chicken broth, low-sodium
  • 1 tablespoon apple cider vinegar
  • Fresh thyme or parsley for garnish (optional)
  • Flaky sea salt for garnish (optional)

Instructions

  1. Preheat your oven to 375°F. Position a rack in the middle.
  2. Pat the chicken thighs dry with paper towels.
  3. In a small bowl, mix the salt, pepper, and garlic powder. Sprinkle evenly over both sides of the chicken thighs. Let them sit at room temperature for 10 minutes.
  4. In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, and apple cider vinegar. Set aside.
  5. Heat a 12-inch cast iron skillet over medium heat. Add the olive oil and swirl to coat. Place the chicken thighs skin-side down in the cold pan. Cook undisturbed for 8-10 minutes until deep golden brown.
  6. Flip the chicken using tongs. Cook for 2 minutes on the second side.
  7. Remove the chicken to a plate. Do not wipe out the pan.
  8. Reduce heat to medium-low. Add the butter and let it melt, scraping up browned bits. Add the minced garlic and cook for 30 seconds until fragrant.
  9. Pour in the chicken broth and bring to a simmer, scraping up any remaining bits. Let it bubble for 1 minute.
  10. Add the honey mustard mixture and whisk to combine. Simmer for 2-3 minutes until it thickens slightly.
  11. Return the chicken to the pan, skin-side up. Spoon some sauce over the tops.
  12. Transfer the skillet to the oven and bake for 20-25 minutes, or until internal temperature reaches 165°F.
  13. Remove from oven and let rest for 5 minutes. Spoon pan sauce over the chicken, garnish with fresh thyme or parsley and flaky sea salt, and serve immediately.

Notes

For extra-thick sauce, remove chicken after baking and simmer sauce on stovetop for 2-3 minutes. Don’t rush the sear; let chicken cook undisturbed for full 8-10 minutes. Watch garlic carefully to avoid burning. Let chicken rest 5 minutes before serving.
