Juicy pork chops seared in a rich garlic butter sauce, ready in under 30 minutes. This one-pan wonder is perfect for busy weeknights and delivers incredible flavor with simple ingredients.

Ingredients

Scale
  • 4 pork chops (about 1 inch thick, bone-in or boneless)
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 cup chicken broth (low-sodium)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Take pork chops out of fridge 15 minutes before cooking. Pat dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat a large cast iron skillet over medium-high heat. Add olive oil and let it get hot, about 2 minutes, until shimmering.
  3. Place pork chops in hot pan. Sear without moving for 4-5 minutes until deep golden brown. Flip and cook another 3-4 minutes.
  4. Reduce heat to medium-low. Add butter to pan, let melt. Add minced garlic and dried thyme. Stir for about 30 seconds until fragrant.
  5. Tilt pan slightly and spoon garlic butter over pork chops for 1-2 minutes, basting continuously.
  6. Check internal temperature with a meat thermometer; it should reach 145°F (63°C). If not, continue cooking and basting.
  7. Transfer pork chops to a cutting board and tent loosely with foil. Add chicken broth to pan, scraping up browned bits. Simmer 1-2 minutes until slightly thickened. Adjust seasoning.
  8. Let pork chops rest 5 minutes. Pour garlic butter sauce over chops, garnish with parsley, and serve immediately.

Notes

Don’t crowd the pan; cook in batches if needed. Let pork chops rest for 5 minutes before serving. For extra flavor, add optional lemon zest, red pepper flakes, or mushrooms.
