This cozy fluffy pancake mix in a jar recipe captures the perfect comforting breakfast experience with light, airy pancakes and a hint of vanilla. It’s quick to make, easy to gift, and perfect for busy mornings or special occasions.

Ingredients

Scale
  • 3 cups (360g) all-purpose flour
  • 3 tablespoons baking powder
  • 1 teaspoon baking soda
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1/3 cup powdered milk (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 tablespoon vanilla sugar or vanilla bean powder (optional)

Instructions

  1. Measure the dry ingredients: 3 cups (360g) all-purpose flour, 3 tablespoons baking powder, 1 teaspoon baking soda, 3 tablespoons granulated sugar, and 1 teaspoon salt. Optional: 1/3 cup powdered milk, 1/2 teaspoon ground cinnamon, and 1 tablespoon vanilla sugar or vanilla bean powder.
  2. Combine all dry ingredients in a large mixing bowl. Whisk or stir until evenly mixed to avoid pockets of baking powder or soda.
  3. Transfer the mixture into a wide-mouth mason jar or airtight container using a funnel or spoon. Leave some space at the top.
  4. Seal the jar tightly and label with contents and instructions.
  5. To make pancakes: For every 1 cup (120g) of pancake mix, whisk in 3/4 cup (6 fl oz / 180ml) milk, 1 large egg, and 2 tablespoons (1 fl oz / 30ml) melted butter or oil. Stir gently until just combined; batter should be lumpy but smooth.
  6. Heat a non-stick skillet or griddle over medium heat (about 350°F / 175°C). Lightly grease with butter or oil.
  7. Pour 1/4 cup (2 fl oz / 60ml) batter per pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook another 1-2 minutes until golden brown.
  8. Serve hot with butter, maple syrup, or fresh fruit.

Notes

Do not overmix the batter; a few lumps help keep pancakes tender. Let the batter rest for 5 minutes before cooking to improve texture. Use fresh baking powder and baking soda for best results. Flip pancakes only once when bubbles appear and edges look set. Keep cooked pancakes warm in a low oven (200°F / 90°C) while finishing the batch.
