  • 2 tablespoons cornstarch

  • Pinch of salt
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • ¾ cup whole milk or buttermilk
  • 1 tablespoon granulated sugar

Instructions

  1. In a medium bowl, combine peeled and sliced peaches with granulated sugar, cornstarch, ground cinnamon, fresh lemon juice, vanilla extract, and a pinch of salt. Toss gently to coat evenly and set aside for 10 minutes to macerate.
  2. Preheat oven to 375°F (190°C).
  3. In a large bowl, whisk together flour, baking powder, salt, and sugar until well combined.
  4. Cut cold, cubed butter into the flour mixture using a pastry cutter or two knives until it resembles coarse crumbs with pea-sized bits of butter.
  5. Pour milk or buttermilk into the flour-butter mixture and stir gently just until the dough comes together; do not overmix.
  6. Pour the peach filling into a greased 5- to 6-quart Dutch oven, spreading evenly.
  7. Drop spoonfuls of biscuit dough over the peaches in rough dollops, leaving small gaps.
  8. Bake in the preheated oven for 35–40 minutes until the biscuit topping is golden brown and the peach filling is bubbly. A toothpick inserted into the biscuit should come out clean.
  9. Let the cobbler rest for 10 minutes before serving to thicken.

Notes

Keep butter cold for flaky biscuits. Do not overmix biscuit dough to avoid toughness. Peeling peaches is recommended for smooth filling but optional. Tent with foil if biscuit topping browns too fast. Sprinkle coarse sugar on top before baking for extra crunch. Can substitute gluten-free flour or dairy-free ingredients as needed.
