This cozy classic banana bread with walnuts is a recreation of a beloved café memory, featuring tender, moist crumb with a crackly top and toasted walnuts for a warm, buttery crunch. It’s simple, comforting, and perfect for any occasion.

Ingredients

Scale
  • 3 large ripe bananas, mashed (about 1 ½ cups or 340g)
  • ½ cup (113g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup (120g) walnut halves or pieces, toasted and roughly chopped

Instructions

  1. Preheat oven to 350°F (175°C). Position rack in the center. Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the two long sides. Lightly grease exposed ends with butter or non-stick spray.
  2. Toast walnuts in a small dry skillet over medium heat for 3-4 minutes until fragrant. Transfer to a plate to cool completely, then roughly chop.
  3. In a large bowl, mash bananas with a fork until mostly smooth with a few small lumps.
  4. Add melted butter, granulated sugar, brown sugar, eggs, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
  5. In a separate medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  6. Pour dry ingredients into wet mixture. Fold gently with a rubber spatula until just combined—do not overmix. A few small lumps are fine.
  7. Gently fold in toasted walnuts until evenly distributed.
  8. Pour batter into prepared loaf pan and spread evenly. Tap pan gently on counter to release air bubbles.
  9. Bake for 55-65 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Top should be deep golden brown and cracked.
  10. Cool in pan on a wire rack for 15 minutes. Use parchment overhang to lift bread out and transfer to rack to cool completely before slicing.

Notes

Toast walnuts for best flavor. Do not overmix batter. Let bread cool completely before slicing. Bread tastes even better on day two. Store at room temperature for up to 4 days or freeze for up to 3 months.
