A warm, comforting breakfast casserole made with pre-made cinnamon rolls soaked overnight in a custard mixture and baked to golden perfection. Perfect for lazy weekend mornings or brunch with friends.

  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2% milk
  • 1/2 cup (120 ml) heavy cream (optional)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar (optional)
  • A pinch of salt
  • Powdered sugar & cream cheese glaze (optional): 4 oz (115 g) softened cream cheese, 1 cup (120 g) powdered sugar, 1/2 teaspoon vanilla extract

Instructions

  1. Unroll or cut cinnamon rolls into 1 to 1.5 inch bite-sized chunks and place in a greased 9×13-inch baking dish, spreading loosely.
  2. In a large bowl, whisk together eggs, milk, heavy cream, vanilla extract, ground cinnamon, brown sugar, and salt until well combined and slightly frothy.
  3. Pour custard mixture evenly over cinnamon roll chunks and gently press down to help absorb the liquid. Cover tightly with plastic wrap or foil.
  4. Refrigerate the covered casserole for at least 6 hours, preferably overnight.
  5. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit at room temperature for 15 minutes.
  6. Bake uncovered for 45-50 minutes until top is golden brown and custard is set (knife inserted should come out clean).
  7. Drizzle cream cheese glaze or cinnamon roll icing over warm casserole.
  8. Let cool for 5 minutes before slicing and serving.

Notes

Letting the casserole soak overnight is key for a custardy texture. Use room temperature eggs and milk for better custard consistency. If edges brown too fast, tent with foil after 30 minutes. Smaller cinnamon roll pieces absorb custard better. Can add chopped nuts or fruit layers for variation.
