Cozy Cinnamon Baked Apple Crisp with Oat Crumble

A warm, comforting apple crisp with a buttery oat crumble topping, perfect for cozy nights. This forgiving recipe uses simple pantry ingredients and comes together in about 45 minutes.

  • 1/4 cup light brown sugar, packed

  • 1 tablespoon fresh lemon juice
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract

  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven.
  2. Prepare your apples: peel, core, and slice into 1/4-inch thick pieces.
  3. Make the apple filling: In a large mixing bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, lemon juice, flour, vanilla extract, and salt. Toss until every slice is coated. Let sit for 5 minutes.
  4. Make the oat crumble topping: In a medium mixing bowl, whisk together oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and cut in with a pastry cutter or two forks until mixture resembles coarse meal (some pea-sized butter pieces are okay).
  5. Assemble the crisp: Lightly grease an 8×8-inch baking dish. Pour the apple mixture into the dish and spread evenly. Sprinkle the oat crumble evenly over the top without pressing down.
  6. Place the dish on a baking sheet. Bake for 35-40 minutes, until topping is golden brown and filling is bubbling around the edges. If topping browns too quickly, tent loosely with foil for the last 10 minutes.
  7. Cool for at least 10-15 minutes before serving to allow the filling to set.

Notes

For best results, use cold butter and old-fashioned rolled oats. Let the crisp rest for 10-15 minutes after baking to allow the filling to set. For a gluten-free version, substitute all-purpose flour with a gluten-free 1:1 baking blend and use certified gluten-free oats. For a vegan version, replace butter with a high-quality vegan butter stick.
