A hearty, comforting breakfast casserole made with breakfast sausage, frozen shredded hash browns, cheddar and mozzarella cheeses, and a creamy egg mixture. Perfect for feeding a crowd or meal-prepping for the week, this dish comes together in under an hour and is endlessly adaptable.

Ingredients

Scale
  • 1 pound breakfast sausage (mild or spicy)
  • 3 cups frozen shredded hash browns, thawed
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 large eggs
  • 1 ½ cups whole milk
  • ½ cup sour cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ½ cup diced onion (optional)
  • ½ cup diced bell pepper (optional)
  • ¼ cup chopped green onions (for garnish)
  • Dash of hot sauce (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cook the sausage in a large skillet over medium-high heat, breaking it into small crumbles, for 6-8 minutes until browned. If using onion and bell pepper, add them during the last 2-3 minutes. Drain excess fat and set aside.
  3. Spread the thawed hash browns evenly in the prepared baking dish. Season with a pinch of salt and pepper.
  4. Distribute the cooked sausage evenly over the hash browns.
  5. Sprinkle both cheeses over the sausage, reserving about ½ cup of cheddar for the top.
  6. In a large bowl, whisk together eggs, milk, sour cream, salt, pepper, garlic powder, and paprika until fully combined. If using hot sauce, whisk it in now.
  7. Pour the egg mixture evenly over the casserole. Let it settle for a minute, then sprinkle the reserved cheddar on top.
  8. Bake for 35-40 minutes. If the top browns too quickly, loosely cover with aluminum foil after 25 minutes. The casserole is done when the center is set and no longer jiggles.
  9. Let the casserole rest for 5-10 minutes before cutting into squares.
  10. Serve warm, garnished with green onions or a dollop of sour cream if desired.

Notes

Thaw hash browns thoroughly and pat dry to avoid a watery casserole. Let the casserole rest before cutting for clean slices. For a make-ahead option, assemble the night before and refrigerate; add 5-10 minutes to baking time.
