A refreshing and easy summer salad combining sweet watermelon, salty feta, fresh mint, and a tangy balsamic glaze. Perfect for backyard barbecues and hot days.

  • 4 cups watermelon, cubed (about 1/2 of a medium watermelon)
  • 1/2 cup feta cheese, crumbled (preferably block feta packed in brine)
  • 1/4 cup fresh mint leaves, thinly sliced (chiffonade)
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • Pinch of flaky sea salt (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Prep the watermelon: Cut the watermelon in half crosswise, then slice each half into 1-inch thick rounds. Lay each round flat on your cutting board and cut off the rind, following the curve of the fruit. Cut the flesh into 1-inch cubes. You should have about 4 cups. Place the cubes in a large mixing bowl.
  2. Prepare the mint: Stack the mint leaves, roll them tightly into a cigar shape, and slice crosswise into thin ribbons (chiffonade). Add to the bowl with the watermelon.
  3. Crumble the feta: If using a block of feta, crumble it with your fingers or a fork directly over the bowl into small, uneven pieces. Add to the bowl.
  4. Make the dressing: In a small bowl or ramekin, whisk together the balsamic glaze and olive oil until combined.
  5. Assemble the salad: Drizzle the dressing over the watermelon mixture. Gently fold everything together with a large spoon or spatula until lightly coated. Be careful not to break up the watermelon cubes too much.
  6. Finish and serve: Transfer the salad to a serving platter or shallow bowl. Sprinkle a pinch of flaky sea salt and a few cracks of black pepper over the top. Garnish with whole mint leaves if desired. Serve immediately.

Notes

Use a ripe watermelon (heavy for its size with a creamy yellow spot). Block feta in brine is creamier than pre-crumbled. Don’t dress the salad until just before serving to avoid sogginess. For a dairy-free version, omit feta or use a plant-based alternative. Leftovers can be refrigerated for up to 24 hours; drain excess liquid before eating.
