Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. Make the cream cheese filling first. In a small bowl, beat together 4 ounces softened cream cheese, 2 tablespoons sugar, 1 egg yolk, and ½ teaspoon vanilla extract until smooth and creamy. Set aside.
  3. Mix the dry ingredients. In a large bowl, whisk together 1 ¾ cups all-purpose flour, 1 cup granulated sugar, 1 teaspoon baking soda, ½ teaspoon baking powder, ½ teaspoon salt, and 2 teaspoons pumpkin pie spice.
  4. Mix the wet ingredients. In a separate medium bowl, whisk together 1 cup pumpkin puree, ⅓ cup vegetable oil, ½ cup packed brown sugar, 2 large eggs, and 1 teaspoon vanilla extract until smooth.
  5. Combine wet and dry ingredients. Pour the wet mixture into the dry mixture and fold gently with a rubber spatula until just combined. Do not overmix.
  6. Fill the muffin cups. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
