  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter
  • 2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons brown sugar

Instructions

  1. Prepare the peach filling: In a large saucepan, combine sliced peaches, 1/2 cup sugar, 2 tablespoons cornstarch, lemon juice, and cinnamon. Let sit for 5 minutes. Cook over medium heat, stirring frequently, until mixture comes to a simmer and thickens (about 5-7 minutes). Cook for 2 more minutes, then remove from heat. Pour into an 8-inch square baking dish and spread evenly. Let cool.
  2. Make the custard: In a medium bowl, whisk together 1/2 cup sugar and 1/4 cup cornstarch. Add egg yolks and whisk until smooth and pale. In the same saucepan, heat 2 cups whole milk over medium heat until warm (small bubbles around edges, about 3 minutes).   4. Serve cold, straight from the fridge. Optionally top with whipped cream or vanilla ice cream.

Notes

Do not skip the chilling time; the custard needs to set properly. For best results, chill overnight. The topping will soften over time, but the flavors meld beautifully. If custard gets lumpy, strain through a fine-mesh sieve.
